Caesar Salad Dressing Recipe

 60g grated parmesan
 1 clove garlic minced
 3 anchovy fillets
 60g mayonnaise
 40g fresh lemon juice
 1 TBSP dijon mustard
 80g olive oil
 Black pepper to taste

Using a beater - place cheese, garlic, anchovies, mayo, lemon juice and mustard in a bowl and beat on medium speed for about a minute.


Slowly pour the olive oil in while still beating it to emulsify the dressing.
