Ingredients

Lemon curd

• 1/4 cup lemon juice
• Zest of 1 lemon
• 2 egg yolks
• 1 whole egg
• 1/4 cup honey
• 2 tbsp butter

Coconut yoghurt

• 1 cup vanilla coconut yoghurt

Method

Step 1: Make the lemon curd

Add all lemon curd ingredients to a small saucepan and whisk until well combined.

Place over medium heat and bring to a gentle simmer, whisking continuously. Continue whisking until the mixture thickens and becomes smooth and glossy.

Remove from heat and pour into a glass jar. Place in the fridge for at least 3 hours to cool and set (it will thicken further as it cools).

Step 2: Mix the yoghurt

To serve, stir 2 spoonfuls of lemon curd through 1 cup of coconut yoghurt until combined.

Step 3: Fill and enjoy
