Ingredients:
- 3 Stand 'n Stuff mini taco tortillas (we used Old El Paso)
- 2 eggs
- 1 tablespoon of thickened cream
- 2 slices of ham
- ¼ cup grated cheddar cheese
- Your choice of vegetables (think tomatoes, spinach, corn, peas, mushrooms, or roasted pumpkin!)
Method:
- Preheat the oven to 160°C.
- Prepare the tortillas: Arrange the mini tortillas on a baking sheet.
- Add fillings: Fill each tortilla with chopped ham and your selected vegetables.
- Mix the egg base: Whisk together the eggs and thickened cream.
