I decided to post this recipe because every time I want to make this I have to look for the reel on instagram which is a mission so I've saved it here for all of us!
This butter chicken is a dish that makes a regular appearance in our household, especially during the cooler months. It's a meal that everyone loves, and when you find something the whole family will eat without complaints, it feels like winning the lottery! AMAZING for the freezer for those nights when you get home late from activities or don't have time/feel like cooking.
Ingredients:
- 1.2 kg chicken thighs, trimmed of fat
- Salt & pepper to taste
- 3/4 jar Patak's Tandoori paste
- 1 can (400ml) coconut milk or cream
- 1/4 cup tomato paste
- 1/2 cup Greek yoghurt
Method:

Prepare the Chicken:
- Fry off the chicken thighs in a pan. You can slice them before browning if you prefer.
- Season well with salt and pepper.
- Once browned, remove from the pan and slice or chop.

Make the Sauce:
- While the chicken is browning, combine all the sauce ingredients in a roasting pan.
- Add approximately 1/2 cup of water and mix well.

Combine and Bake:
- Add the chopped chicken into the sauce and mix well.
- Don't forget to pour in the juices from the pan—they're the best part!
- Cover with foil and bake in a preheated 160°C oven for 2.5 hours.
- If you're short on time, you can reduce the baking time to just an hour.

Serve and Enjoy:
- Serve your butter chicken with warm naan and fluffy rice for the ultimate comfort meal.
