Soft Sticky Date Muffins

Soft Sticky Date Muffins

Ingredients

220 g Pitted dates, chopped finely
310 g water
2 tsp bicarbonate of soda
70 g caster sugar
30 g soft brown sugar
70 g butter (softened)
2 large eggs
1 tsp vanilla bean paste
180 g self raising flour
1 tsp cinnamon

Directions

Preheat the oven to 180C. Place the finely chopped dates and water into a saucepan. Heat on the stove for about 5 minutes. Add the bicarbonate of soda and stir until well combined. Set aside.

Place the butter into a bowl along with the caster sugar and using an electric beater, beat the butter and sugar until light and creamy. Next while the beaters are still going, add the brown sugar, eggs (one at a time), vanilla bean paste, self-raising flour, cinnamon and lastly add the date mixture. Mix until well combined.

Using silicone moulds and an ice cream scoop, scoop one scoop of mixture into each mould and bake in your preheated oven for about 20-25minutes.
