School lunches don’t have to be boring - and this lunchbox is proof. This one’s hands-on, packed with flavour, and super easy for little hands to build their own bites (aka: less complaining, more eating).
It’s got a warm, protein-packed base, loads of colourful crunch, and all the fun “nacho toppings” vibes … just lunch box-style.
What’s inside the lunchbox
Mexican mince & bean mix (the hero)
A savoury, protein-packed base made with:
-
500g lean mince
-
1 tin black beans
-
½ cup tomato passata
-
1 pack taco seasoning (we love Mingles)
How we keep it warm:
We prep our insulated food jar by filling it with boiling water for 10 minutes, draining, then adding the hot mince mix. Warm lunch = happy lunch.
Guacamole
Creamy avocado with a hint of lime and a sprinkle of salt. Perfect for dipping and dolloping.
Capsicum sticks
Sweet, crunchy, and made for dunking into guac.
Cheddar cheese
Freshly grated, ready for sprinkling over the top (because cheese makes everything better).
Cherry tomatoes
Fresh and crunchy - and they double as a fun nacho topping too.
Sour cream mix (drizzle-friendly magic) 🤍
We mix sour cream with a splash of milk until pourable, then pop it into a Sinchies pouch so it’s easy to drizzle (and way less mess than a spoon situation).
How to pack it (without the soggy sadness)
-
Keep the warm mince mix in the insulated food jar.
-
Pack the toppings separately so everything stays fresh and crunchy.
-
Let the kids build their own nachos at lunchtime - DIY lunches are always a win.
Other options we love (mix and match!)
Want to switch it up? Here are some easy add-ins that work perfectly:
-
Corn – frozen corn sautéed in butter + smoked paprika, or boiled corn on the cob
-
Shredded chicken – works great with leftover roast chook
-
Salsa or pico de gallo – chunky, fresh, and great for dipping
-
Soft mini tortillas – let kids make mini burritos or soft tacos
-
Avocado slices – if your little one isn’t a guac fan
-
Olives – black or green, pitted
-
Cucumber sticks – crunchy dippers that go with everything
Quick mum tip
If you batch-make the mince mix on Sunday, you can freeze portions and pull one out the night before. Then it’s just heat, pack, and go.
