Slow Cooker Satay Chicken by Live Love Nourish

Ingredients:

  • 1kg chicken thighs, cut into 3cm pieces
  • 1 onion, sliced
  • 1 tsp curry powder
  • 2 tsp ginger, minced
  • 2 tsp garlic, minced
  • 1/3 cup natural peanut butter
  • Juice of 1/2 lemon
  • 1 tbsp honey (optional)
  • 2 tbsp tamari sauce
  • 250ml stock
  • 400ml canned coconut milk
  • 200g green beans, trimmed
  • 2 red capsicums, sliced
  • 1 green capsicum, sliced

Method:

  1. Add all of your ingredients, except beans, capsicum and coconut milk, to a large, freezer friendly sealable bag.
  2. Label & store in the freezer for an easy ready-to-cook dinner.
  3. When defrosted, add to your slow cooker and cook on low for 5-6 hours or high for 4 hours. In the final hour of cooking add veggies and coconut milk.
  4. Serve with rice (which I usually prep ahead in the freezer also).
