🧁 Ingredients

  • 1 whole orange

  • 3 eggs

  • ⅓ cup olive oil

  • ¾ cup raw sugar

  • 2 cups self-raising flour


🔄 Method

  1. Preheat your oven to 180°C (160°C fan-forced) and grease or line a muffin tin.

  2. Cut the orange into quarters and remove any seeds.

  3. In a blender or food processor, combine the orange, eggs, olive oil, and raw sugar. Blend until smooth.

  4. Pour the mixture into a bowl and gently stir in the self-raising flour until just combined — don’t overmix!

  5. Divide the batter evenly among the muffin cups.

  6. Bake for about 20 minutes or until golden and a skewer inserted comes out clean.

  7. Let cool slightly before serving.
