Making your own creamy and delicious yogurt at home has never been easier or more affordable. Not only does it save you money, but it also allows you to control the quality of ingredients and reduce waste by using a reusable pouch. Ingredients:
- 55 g natural yoghurt
- 1000 g full cream milk
- 50 g full cream milk powder
- 30 g caster sugar
- 250 g water
- 30 g lemon juice
Method:
- Begin by placing a small bowl onto the mixing bowl lid and weigh the yogurt into it. Set it aside for later.
- Pour the milk into the mixing bowl and set the temperature to 80°C for 10 minutes at speed 3. You don't need to use the measuring cup for this step. Allow the milk to cool in the mixing bowl until it reaches around 45°C, which should take approximately 45 minutes.
- Take a portion of the cooled milk and add it to the reserved yogurt in the small bowl. Stir them together until well combined.
- Into the mixing bowl, add the yogurt mixture, milk powder, and optional sugar. Mix these ingredients for 5 seconds at speed 4.
- Divide the mixture into 8 Sinchies reusable pouches. Screw the lids on tightly and ensure that the base is sealed.
- Now, it's time to prepare the Varoma for steaming. Rinse the mixing bowl.
- In the rinsed mixing bowl, add water and lemon juice. The lemon juice is to prevent the bowl from rusting as it ferments.
- Place the Varoma dish into position and lay out the pouches evenly. Secure the Varoma lid and start the fermentation process for 10 hours at 70°C.
- Once the fermentation is complete, remove the Varoma, and transfer the pouches with the yogurt into the refrigerator. Allow it to chill for at least 4 hours or until it's thoroughly cold.
- Store them in the refrigerator until you're ready to serve.
