Easter Egg Rocky Road – The Best Way to Use Up Leftover Easter Chocolate!

ThisΒ Easter Egg Rocky Road is the perfect way to turn leftover chocolate into a delicious, no-bake treat! Fun to make with the kids and packed with biscuits, marshmallows, lollies, and chocolate, this easy dessert is a guaranteed hit.


Ingredients:

  • 8 Scotch Finger biscuits, crushed
  • 2 bars milk chocolate, melted
  • 1 bag of lollies (we used red frogs)
  • 1 cup baby marshmallows
  • Mini Easter eggs
  • KitKat bunnies
  • Creme eggs (optional)

Instructions:

1️⃣ Prepare the Mix:

  • In a large bowl, combine crushed Scotch Fingers, baby marshmallows, and lollies.

2️⃣ Melt the Chocolate:

  • In a microwave-safe bowl, melt the milk chocolate in 30-second intervals, stirring in between until smooth.

3️⃣ Assemble the Rocky Road:

  • Pour the melted chocolate over the biscuit mixture and stir to coat everything evenly.
  • Transfer to a lined baking tray and spread out evenly.

4️⃣ Decorate:

  • Press in mini eggs, KitKat bunnies, and creme eggs on top while the chocolate is still soft.

5️⃣ Set & Serve:

  • Refrigerate for 1 hour, then break into pieces and enjoy!
