Vegetable and Butterbean Quinoa Recipe

I had to share this when i found it - it sounds delicious and nutritious and it's a 2 in 1, puree and a spread - which ticks boxes for me.

Vegetable & Butterbean Quinoa Baby Food
Yields1 Serving
 1 leek
 1 kumara (sweet potato)
 1/4 cauliflower
 1 courgette
 1 x carrot
 1/4 cup quinoa
 1 can butter beans
 dash of olive oil

Dice the mixed vegetables up and place them in a saucepan with the quinoa and boil for about 10 to 15 minutes until everything is cooked. Drain off the water, add the can of butter beans and the dash of olive oil. Blend until the desired consistency is reached

Place into a 500ml Reusable Food Pouch

TOP TIP: It freezes well too (provided that you are using fresh rather than frozen vegetables).
