Finely dice the onion and crush the garlic clove. Heat the olive oil in a saucepan and cook the onion and garlic until the onion is translucent.
Next add your diced up capsicum, zucchini and tomatoes and cook for about 5 minutes until soft.
Add the cream and vegetable stock and simmer for about 20 minutes.
Take off the heat and wait for it to cool. Next blend it up. You can use this immediately or you can and pour it into your Sinchies 200ml pouches and freeze it.
I sometimes add parsley, chicken and cheese.
