Chocolate Chia Pudding Recipe – with Mint or Peanut Butter

I love this Chia Pudding especially with all the benefits of chia seeds and cacao powder and don't feel guilty when i slurp down a few pouches! The Sinchies taste testers loved it too...... it didn't last 2 seconds with them around! You can change the mint for another flavouring if mint and chocolate isn't your thing.

 2 TBSP Coconut Palm Sugar
 2 TBSP Water
 6 fresh mint leaves(or swap for peanut butter)
 1/4 cup chia seeds
 1 tsp vanilla extract
 1 TBSP cacao powder
 1 cup milk

Place the Sugar, Water and Mint leaves (or peanut butter) in a microwave proof bowl and heat it for about 1 minute until the sugar has dissolved.

Take out the mint leaves and throw them away.

In another bowl whisk the chia seeds, vanilla extract, cacao powder, milk and chia water.

Pour it into 2 x 140ml Sinchies reusable pouches and leave it in the fridge for about 3 hours to set
