Preheat the oven to 180C. Line a muffin tray with baking paper or spray it with oil.
Cook the macaroni as per the directions on the back of the packet. Whilst doing that in another saucepan, melt the butter.
Once the butter has melted add the flour and stir it around until it has incorporated.
Add the milk and stir.
Once this thickens slightly add the cheeses, english mustard and salt and pepper.
Remove from the heat.
Once the macaroni is cooked (I like it el-dente), drain the water and add the sauce to this and stir until well combined.
Evenly distribute the mac n' cheese mix between some muffin cases, top them with a bit more cheese, a slice of tomato and bacon pieces.
Bake them in the oven on 180C for about 20 minutes
