Preheat the oven to 180C fan forced.
Using a food processor, thermomix or something similar whizz up the colby cheese until it's crumbly looking. Add the plain flour and whizz again. While the blades are still spinning slowly pour in the water and then mix until it looks crumbly.
Knead the mix lightly and then roll it out on a floured surface. The thinner you roll it the crunchier the crackers. Cut it out into shapes, spray lightly with olive oil and then sprinkle your favourite seasoning on.
Parmesan cheese was a big hit as was chicken salt, easily sprinkled on using a Sinchies pouch.
Bake it in the preheated oven for about 5 - 10 minutes until golden brown.
