Goji Berry Bliss Balls

We love goji berries in this house as much as we love chia seeds and add them to whatever we can. My little ones daycare is nut free so i'm always trying to make up things that are healthy, nutritional and don't contain nuts. A friend forwarded me a recipe for some nut free balls, but i didn't have pepitas or sunflower kernels so used what I had and these turned out perfectly. My little one devoured them which  I always love seeing. I've portioned them out in our Snack bags so now i just need to grab a pack and add it to her lunchbox. So organised ;)

Ingredients

4 desiccated coconut
0.50 cup dried goji berries
7 tbsp jam (we used strawberry jam)
3 tbsp chia seeds

Directions

Place the coconut and goji berries into a food processor, bellini or thermomix and mill until the mix resembles a fine powder

Add the jam and chia seeds and mix until all is combined

Using a 1/2 teaspoon measure, scoop out mix and place each scoop on a plate or chopping board.

Wet your hands and then roll the mix into balls.

Portion the balls out into our Sinchies snack bags ready for snack time
