Fruity Slice Recipe

This fruity slice is a great alternative to store bought meusli bars and fantastic for lunchboxes!

Fruity Slice Recipe
Yields1 Serving
 120g butter
 1/2 cup raw sugar
 1/4 cup honey
 1/3 cup sesame seeds
 1 1/2 cups mixed dried apricots, dates, mulberries - finely chopped
 1/4 cup sunflower seeds
 2 TBSP Chia Seeds
 1 1/2 quinoa flakes or rice bubbles
 1/2 cup moist shredded coconut
 1 1/4 cups self raising flour
 1 egg

Preheat oven to 150C (fan forced), line a 26 x 16cm pan with baking paper.

Place butter, sugar & honey in a saucepan & stir until the sugar dissolves.

Continue to boil for 3 mins & then allow the mix to cool for 5 mins.

Place the sesame seeds, finely chopped dried fruit, sunflower seeds, chia seeds, quinoa flakes, coconut and self raising flour in a bowl & mix until combined.

Make a well in the centre, add the butter mix and egg and stir until combined.

Press over the pan until it's all level, sprinkle with a few more sesame seeds and bake for about 25 minutes or until golden.
