Chicken and Basil Pasta Bake

 1 tbsp Olive Oil
 2 spring onions
 1 green capsicum
 6 basil leaves
 100 g Mushrooms
 1 chicken breast
 100 g butter
 100 g plain flour
 3 cups milk
 150 g cheddar cheese
 2 litres of water
 200 g spiral pasta
Chicken and Basil Pasta Recipe

Preheat the oven to 180C and grease a 20cm baking dish.
Bring some water to the boil and cook your pasta for the time recommended for al dente on the packet.


Heat some oil in a non-stick fry pan and sauté the diced chicken, ,sliced spring onions, diced capsicum and chopped basil over medium heat for five minutes.


Add mushrooms and cook until soft. Transfer this to the baking dish.


Slowly melt the butter in a large saucepan and stir in the flour. cone combined slowly whisk the milk in to make a white sauce. Add 50grams of the cheese and stir thoroughly.


Combine the pasta, chicken & Vegetables and sauce. Cover with the remaining cheese and bake for 30 minutes.


Get your children involved with washing vegetables and measuring pasta!
