Carrot and Sultana Cookies Recipe

Carrot & Sultana Cookies Recipe
Yields1 Serving
 100g butter
 1/2 cup sugar
 2 egg whites
 2 medium sized carrots (grated)
 2/3 cup saltanas
 1 cup wholemeal self raising flour
 1 tsp cinnamon
 1 cup oats
 1/2 cup milk

Preheat the oven to 180 degrees celcius.

Beat the butter and sugar until light and fluffy

Add the egg white and mix until creamy.

Stir in the remaining ingredients until well combined.

Place tablespoons or teaspoons (depending on the size you'd like) of the mix on lined trays and bake until golden.

The tablespoon of cookie mix takes approximately 12 - 15 minutes.

Cool and enjoy. Store in the refridgerator or freeze for lunchboxes.
