Rice Bubble Bar

This is a healthier version to the LCM rice bubble bars you can buy. The Sinchies team at HQ test tasted this and lets just say I have a few crumbs's addictive!

Rice Bubble Bar

 2 cups rice bubbles
 1/2 cup desiccated coconut
 1/4 cup sesame seeds
 1 tbsp chia seeds
 1/4 cup finely chopped dates
 1/4 cup finely chopped apricots
 100g butter
 1/2 cup sugar
 Squeeze of lemon juice

Melt the butter in saucepan,


add the sugar & lemon juice


and stir until dissolved.


In a bowl, place the rice bubbles, desicated coconut, sesame seeds, chia seeds, dates and apricots and mix.


Pour in the melted butter and sugar mix and combine well.


Press it into a pyrex dish or tin (approximately 30cm x 20cm) and leave it in the fridge to set.


Cut into squares and put them into your Sinchies Reusable Snack Bags.
