Peel and cut the potato, carrot and pumpkin into chunks.
Place the potato, carrot, pumpkin, broccoli in a saucepan and cover this with water. Simmer until the vegetables are tender. Drain the water (I always keep about a cup of vegetable water to use for blending) and then add the parsley and tomato paste
In a frying pan, lightly fry the garlic & beef mince in the oil until the beef is brown.
Put the vegetables and beef through a blender, adding some vegetable water if necessary until the desired consistency is reached.
